Émile Héroux has been part of the L'Orée du Bois family for several years. He began as a dishwasher at the age of 14 and quickly discovered his passion for cooking. After pursuing his training at the Institut de tourisme et d'hôtellerie du Québec (ITHQ), Émile worked in renowned restaurants such as Toqué. However, his attachment to L'Orée du Bois always brought him back to the Outaouais region, where he contributed both in the kitchen and in service. In 2020, Émile returned to the team permanently, and after the sudden passing of Chef Jean-Claude Chartrand in March 2021, he took over the kitchen. Now Chef, Émile challenges his team to refresh the dishes with colorful and unique accompaniments while preserving the French and regional gastronomic charm for which L'Orée is known.
